Advantages: Hot, tasty and make a change!

I'm sometimes not very imaginative when it comes to sandwiches - I tend to alternate ham and cheese and tomato, though I must confess to a strange liking of banana sandwiches.
My sandwich fare can get rather repetitive so to break the monotony I sometimes like to whip up a quesadilla.
This is a hot sandwich made from tortilla wraps. You will often find tortilla on BOGOF, they last a while as they are vacuum packed and freeze well too - so this is a good standby.
You will need:
A frying pan and fish slice/spatula, tortilla, cheese (grated) and ham for your basic quesadilla - I will suggest some other fillings in a minute.
Method:
Heat the frying pan to medium, put one tortilla onto the frying pan. Sprinkle on some cheese - enough to cover lightly. Add the ham; shred one piece and scatter.
Next put another tortilla on top. When the lower tortilla starts to shrink slightly or you think the bread is browning use the fish slice to flip the whole thing over.
Cook the other side, when ready slide the whole thing onto a plate, fold into two and cut up into wedges.
These are really delicious! I like to add other fillings too. I have tried - sweet chilli sauce, beef, sweetcorn, tuna (suprisingly nice!) and cooked chicken and turkey.
This makes a hot filling snack which makes a change - children seem to love them too!
