Having a young child around the house, the food I eat for lunch has to be quick and easy - so cans of soup make regular appearances in my life. I don't have any favourite brand, so most cans find their way into the trolley at some point as I tend to look out for special offers. In Somerfield last week Baxter's were on 3 for 2, so a can of Chicken and Vegetable amongst other flavours was picked up.
On opening the can there's plenty of chopped vegetables visible - not so much chicken and the stock making up the soup looks very thin. It does smell chickeny though, so undeterred it was poured into the saucepan and heated up.
Sometimes with soup the stock can thicken up when cooking, but not in this case. However the abundance of vegetables does compensate for it - and on tasting the soup it is quite pleasant, a little bland maybe, but certainly tastes of chicken and vegetable as claimed on the tin.
The blurb on the back of the tin claims that 'the filling yet low fat recipe' which I have to disagree with, as it didn't fill me up - even with the standard slice of bread used to mop up the dregs left in the bowl I was still hungry immediately after - and I need something more substantial to get me through the afternoon - however if you are just after a light meal, then it will probably hit the mark.
The Ingredients of this soup include 11 different vegetables such as carrots, swede and sweetcorn making up 38% of the soups contents. It also lists chicken fat and chicken flavouring, which is not so appetising but I'm guessing that's the reason for the strong chicken taste.
There's no artificial additives, colours, flavours or preservatives added and 1 can makes up one of your 5 a day and the nutritional content per 1/2 can is:-
Cals - 81
Carbs - 14.1g
Fat - 1g (saturates 0.2g)
Fibre - 3.5
Sodium - 0.48g
Salt - 1.2g
So other than the salt, it's a good option, as long as you're not to hungry
A really simple & tasty recipe, this low-fat soup combines chopped vegetables & chicken in a tasty chicken stock. A satisfying lunch when you're trying to maintain a healthy balanced diet.
