      A fantastic ingredient which gives great depth of flavour to many Thai dishes

      This sauce from the Sharwoods range is one which I have begun using quite regularly since starting to cook a lot of Thai food at home. This is not a cook in sauce as such and would be too rich to use as one, more so it is a condiment you will use when cooking, to give added depth to a dish or a sauce.

      I buy this from Asda for around £1 a jar. It is a thick sweet chilli sauce which looks rather like a ketchup - very different from the sweet chilli 'dipping' sauces which are more opaque and intended for dipping spring rolls and the like into or glazing with. They will tend to have clear flakes of chilli in them - this does not and is not for the same purpose.

      I use this mainly for two dishes, one is phad thai which requires this kind of chilli sauce to give the noodles their flavour, mixed with tamarind paste and fish sauce, this is the holy trinity of phad thai flavouring. I would generally use about a third of this jar on a portion of phad thai.

      I also use this sauce as a base for stir fried chicken, mixed in equal parts with sesame oil and soy sauce it creates a base sauce which gives great flavour to the dish.

      In terms of quality, I have tried other sauces but found none that are as consistent as this one, also many of the other sweet chilli sauces available on the market are really only good for dipping whereas this is better for cooking with.

      The jar keeps well in the fridge once opened and stores well for around a month. It is made in a factory where there are nuts so is not suitable for those with allergies. It is vegetarian and despite its very vivid colour it is free from artificial colours, flavours and preservatives.

      For me this is the best version I can get hold of for my thai and oriental cooking, Sharwoods proving once again that they are consistent makers of quality cooking sauces and ingredients.
