The other evening a good friend invited me round for dinner. As often as has happened just lately, it turned into another attempt at feeding me something "Italian". I admit to being very picky about eating Italian food, but who can blame me, when most times it is an unpleasant experience.
Well on this occasion despite being again dissapointed, I did under the guise of being interested in the recipe , ask her just what the ingredients were.
It turns out she had been trying to cut corners and time, and had decided to choose one of those dreadful un-necesseary ready-made pasta sauces. In this instance it was the Tesco Value Pasta Sauce.
For curiousity sake, I had a read on the label. The product, as most ready- made stuff often does, has an abundance of salt, and a string of ingredients primarly aimed at maintaing shelf-life, rather than improving taste.
It turns out that this product comes in a 440g jar, and prices in at 36p, which is only a 1p more than the value tinned tomatoes (at time of writing).
However before you get the impression this is exceptional value in comparison, a fair proportion of this product is tomato puree (concentrate), and water, so your actually getting less 'real tomato' for the price.
BUT to be fair, in comparison to similar products in this genre, this is undeniably great value. The other well known branded products such as Dolmio, cost considerably more, and are more or less a similar product.
Anyway, so what about the taste.
Well there is no escaping the fact that acidity regulators have been used, seeing as this sauce is created in huge batches, its impossible to accurately predict the acidity of any particular batch, so I assume they just add a set amount to a given amount. I can't imagine someone tasting the product and adding the correct quantity. Consequently this is where the artificial, or strangely acidic, or even metallic taste comes into play, and to my tastes, its the biggest downfall.
Again being balanced, the same could be said of many of the other pasta sauces I have been exposed too. Examples include Dolmio, or Knorr, and even the much talked up, and expensively priced Lloyd Grossman range.
All these ready made pasta sauces are a waste of time in my opinion, they compensate for the lack of taste by increasing levels of salt, and rarely taste of anything other than tomato concentrate paste. There are no subtle flavours of fresh herbs, or the natural elegance that garlic can add in terms of flavour.
If you were making a pasta sauce from scratch, you would balance the natural metallic acidity of tomatoes, with a pinch of sugar, season it carefully. Sadly, this is impossible to achieve in bulk produced sauces.
The value is good, but its comparative to the taste. However I do know lots of people are satisfied with the taste of ready made sauces.
So with this in mind, I would recommend this product, and certainly if forced to purchase one, I would choose it over more expensive variations of the tomato concentrate, acidity regulator and water based cocktails available (ready-made pasta sauces I mean).
Im not a fan, but a reluctant recommender!
Summary: One of the best of a bad bunch, and undeniably great value!
