UK Tourists can get to Hong Kong without a Visa for upto 6 months, I arrived at Chek Lap Kok Airport which is a very new airport built on it's own island.
So once you Land in Hong Kong you can take public transport into the city, The best way to get to the main attracions would be to use the MTR which is a train metro system covering the island...
The Train pass costs about $300 at the most which is about £25 and you get 3 days of travel out of the main rail networks and offcourse your outbound and return trip to the aiport that can be used upto 180 days but only once.
There are also taxis and they are all color coded so you know where they operate around.
Red taxis are for All of hong kong except south lantau island and tung chung road whereas the Blue taxis are Only for Lantau Island and the Green taxis is for the Rural areas.
The main attraction that you must see is the Victoria Harbour at night time especially as the whole water and skyline is lit up by the neon lights of the city. There are Night Cruises with a light show which is just great to watch with amazing sounds, this is actually the biggest permanent light show in the world.
Another place to visit is the Golden Bauhinia Square which was where the british gave the island back to china.
In south Hong Kong you can find Ocean Park which is where you will find pandas, a dolpin and whale park and other animals along with some park rides.
For Shopping, Temple Street market is the place to go if you want to experience a real feel of hong kong, here you can buy bargains like CD's, Electronics and clothing, they also have traditional sea food for sale here.

The funny thing I found was that there are 7 elevens I thought that they were mainly in the USA but offcourse they have emerged here too and they are quite good, more like newsagents in asia though.

You didn't mention that the only way to Ocean park is via cable-car. I love HK. Only visited it once, when still British, but left many happy memories
