      A Wicked Strawberry Sponge Roll

      We've had some proper nice weather this week so yesterday we had a bit of a picnic tea in the back garden, my mum done the works and we had sandwiches, chicken drumsticks and loads of picky bits that she put out on the garden table with paper plates to make it feel a bit more special.

      She had already took this cake out of the box by the time I saw it and the roll was soooooooo nice that I had to ask her where she got it from so I could buy it again when it was my turn to go shopping! It's a dead summery pudding, a sponge roll with strawberry jam and vanilla cream inside. It's delish!

      The sponge is mega light and sweet, it's got a gorgeous soft texture that melts in your mouth as you eat it. The strawberry jam is also very sweet and I might as well tell you now so is the cream! The whole thing is proper sweet but with the sponge being so light it doesn't get sickly or anything. I LOVE the jam, it's like an even sweeter and fruitier version of any other strawberry jam and goes proper nice with the sponge.

      Sometimes when you put jam and cream together the cream can go a bit slippery and slimey but it doesn't in this cake and the 2 of them just go wicked together. We cut our slices quite thick and still got 6 slices out of the cake..... and I mean waaaaaay thicker than you'd usually cut a roll like this so if you wasn't so greedy you'd probably get 8 or even 9 out of it. Sod that though, you might as well have a thick slice! lol

      This cake is perfect for this sort of weather because it's not stodgy or sickly or anything like that. I don't think it would go very well with custard because the sponge is too light but a nice dollop of cream would go nice with it.

      Recommended..... a summer pudding!!!
