I am a lover of America and American foods, so I occasionally buy kits to make my own, authentic style American food stuffs and one of those items that I love to make is corn bread.
Aunt Jemima is a big name in the American Home Baking range, and one of the many, many products available from them is their Corn Bread Mix. I recently bought a Corn Bread mix online and when it arrived, I was very excited to make it, as it had been quite some time since I had last eaten corn bread.
The mix comes in a box, about the size of a normal cake mix box, and inside you will find a bag of mix, a plastic mixing bag, and a cardboard baking tray. All you need to add is one egg and 1 and half cups of water.
The idea of the kit is that it is no mess baking, and you just mush all the ingrediants in the mixing bag, but sadly I could not get on with this way of baking and had to settle for using a bowl to mix my corn bread in, as my kitchen looks like it was attacked by a corn bread bomb when I am done using the mixing bag!
It really is simple to use the mix, just follow the very simple, easy to read instructions on the back of the box. These instructions are also accompanied by illustrations to ensure you know exactly what you are doing.
Once you have prepared your mixture, you then pour or scoop it into the cardboard baking tray. This is made to be the perfect size for the mix, so you have a nice tray full of corn bread, where all the pieces are the same size in width, depth and thickness. When I first used this mix, I was actually terrified of putting a cardboard tray in my oven, and I was fully prepared for my oven to suddenly blow into flames.
Luckily it didn't, and the tray didn't even look any different as to when it went in the oven once the corn bread was cooked. It is really easy to pop the corn bread out of the tray once it has had a chance to cool down, and the corn bread really is perfect! The size and shape is exactly what I required and it is really simple to cut the corn bread into 8 servings.
The corn bread comes out perfect tasting too, just as I remember it tasting from when I was a child. It has the perfect amount of taste and moisture, and I really can not fault it what so ever. Shame I can not say it is all my own work lol, I had a little help from my Aunt Jemima.
All the nutrional information you could need is written on the side of the box, and it is per serving. 1 serving is 1/8 of the whole mix. This is handy if you are watching what you eat, or if you wish to know what is in your food for other things like food intolerances etc.
