I have been eating these delicious cakes for years; they are also one of my daughters favourites. When you think about it; Victoria sponge is a simple cake; but made correctly are lovely.

Victoria sponge cake is actually named after Queen Victoria who was said to enjoy a slice of cake with a nice cup of Tea (http://en.wikipedia.org/wiki/Sponge_cake). Victoria Sponge cakes are usually made with Raspberry jam as a filling with whipped double cream or vanilla cream and a dusting of icing sugar on the top (http://en.wikipedia.org/wiki/Sponge_cake).

These Victoria Mini Classics come in boxes of 6 and the filling is Raspberry and Buttercream. The filling is delicious and the sponge itself is quite moist and light and almost melts in your mouth. There is a dusting of icing sugar on each cake. They go down great with a cup of Tea or I sometimes have them with cold custard on the top.
