      Big, pretty, tasty cupcakes for when you don't want to bake

      Tesco Lemon Cupcakes:
      I read somewhere recently that cupcakes had "had their day" and now they were "passé and twee"; Poppycock I say! I love cupcakes, they are pretty , tasty and they always make me smile so I will continue to enjoy them reguardless of their current fashion status.

      Now normally I make my own cupcakes but my Mum was popping round for afternoon tea the day after I got back from my holiday in York so I needed something sweet and pre-made to fill up my cake stand. These Tesco Lemon Cupcakes looked pretty and were reasonably priced so I thought they would be ideal.
      The cupcakes are sold in packs of four for £1.50, (currently on buy 2 get 1 free at time of writing), which I think is good value for what they are. They are packaged simply in a moulded tray to prevent the cupcakes moving around and then encased in plastic wrap. To be honest the packaging doesn't work so well as the plastic can stick to the icing and does nothing to protect the cupcakes from being squashed. Luckily the delivery driver managed to get mine to me with only one slight casualty!

      Each cupcake comes in it's own white paper case which looks simple but pretty and each one is topped with a big yellow swirl of icing sprinkled with little lumps of sugar. The effect is very cheery and the cakes looked awesome on my cake stand and they didn't look entirely shop bought either which is a plus.
      The sponge is so light and fluffy with a hint of lemon and it isn't too sweet either which is a good thing considering the generous helping of icing on the top! The lemon icing has the slightest hint of tangyness from the lemon and the combination is very pleasing and not overly-lemony or bitter.

      I can definitely see me buying these again when I don't have time to make my own, the only slight downside is that they are fairly big but I am sure some people will see that as a good thing!
