      The best sweet in the world!

      One of my daughters is a vegan and it was with great delight that I discovered a coconut ice for sale which was suitable for her diet, and not only that, it is delicious!

      Traditionally made coconut ice is a mixture of condensed milk, coconut, and icing sugar, and the pink colouring used is often from cochineal, which is made from dye extracted from the eggs of the cochineal beetle. This vegan version has managed to substitute both the condensed milk, and the colouring ingredients, to make a vegan friendly version.

      Made by a small firm called The Fabulous Fudge Factory who also make a delicious vegan fudge in traditional double jacket copper boilers in small batches. Perfecting the recipe for this alone took 6 months, and the end product is superb, and is the subject of a review I have previously posted on Dooyoo.

      So to the coconut ice. You can purchase it in Holland and Barrett for £2.99 and for this you will receive 200g and at least 20 pieces.

      The bag is an attractive sunshine yellow, with a pine green and cerise label encasing the name of the product, and describing it as being hand crafted. The bottom half of the packet is transparent and reveals the pieces which are rose pink and white little cubes which nestle together and sit like little mosaic tiles.

      The coconut ice is vegan, vegetarian, dairy free, it has no hydrogenated fats, artificial colours, or preservatives and it is gluten free and gm free, though it may contain traces of nuts. It is made from sugar, glucose syrup, coconut, raspberry puree and beetroot and anthocyanin which is the blue colouring from blueberries.

      The first thing you notice about the sweet is that the pink colour is more subtle then you would see in an artificially coloured product. It is much softer like the Dulux shade "rose white" but with a touch more pink, and the white is a gorgeous pure shade and looks like a little square blanket of newly fallen snow. You can almost imagine this has been mined this with a pick axe from a seam of rose quartz.

      The pink colour is made from a special and secret recipe in Italy, and is made using fresh raspberries. The colour varies between packets indicating the hand made and special nature of this product.

      If you buy this the first thing you must do is to smell the first piece from a newly opened bag, it is divine, and the smell of fresh raspberries mingled with fresh coconut is wonderful. The taste is out of this world, because it is like eating the best part of a thickly fondant iced coconut cake, it is creamy and full of coconut and the raspberry flavour lingers almost like a syrup at the end of the mouthful. It reminds me of eating a ice cream with raspberry sauce on the beach, it is the best I have ever tasted and the creaminess is amazing given it is totally free from dairy. If you are lactose intolerant this is a great find.

They have already won a gold at the Great Taste Awards which are the highly thought of Oscars of the food industry for their fudge, and I'm sure it won't be long before this wins one too!
