An intense, nervy white with concentrated, crisp citrus notes. The palate is well balanced with rounded, green apple flavours and a minerally, steely finish - a wine of great typicity. Food recommendations: Perfect with poultry and fish. Enjoy now or will cellar for 5-10 years. This wine comes from several plots situated on the Cote de Lechet. It is aged on its fine lees during 9 to 12 months. The lees are regularly moved around during the six first months to enrich the structure of the wine. The blend of the different cuvees is done after a tasting in order to obtain an homogeneous final cuvee. The vinification is done for 10% in oak barrels and 90% in stainless steel tanks. The wine is then bottled.
