Pedro Ximenez grapes are picked when they are very ripe and then left out in the sun to attain a higher sugar concentration. For over 35 years this wine has been made and aged in oak casks following the traditional Jerez method. High density, dark colours, intense raisin aromas and sweet, velvety flavours define this smooth, complex wine. A great dessert wine, well matched with ice creams, pastries and blue cheese.
